When you deal with picky eaters I found that playing around a trusted traditional recipe can help. If your kid loves pasta, why not dressing the pasta with a marinara sauce loaded with veggies? Or if your kid loves hamburgers, why not preparing them from scratch adding veggies inside?
This was my inspiration for today’s recipe: my kids simply LOVE hamburgers, it’s their special treat. They would say “YES” to anything that is in the hamburger family, like the carrot coconut chicken burgers I prepared 🙂
I used chicken to offer them a leaner alternative to beef, you can use turkey too. I added coconut cream to give more moist to the burgers, lean meat can be a bit dry. And I added carrots as my little one doesn’t like them raw so I’m being creative to introduce their taste to him. Baby steps 🙂
You can use any vegetable you like (zucchini are a great alternative!!): simply grate or mince it to combine well with the mix.
I served the hamburgers “naked”: without bread bun nor sauce. It worked and they liked them. Of course, you can build your hamburger in between buns and maybe dress it with some tomato slices (I served them as a side), avocado and a yogurt sauce.
Considering the ingredients the recipe is a lovely toddler one: I suggested from 12 months as it requires a bit of gum work, but if your little one is ready, you can serve tiny pieces even at 10 months.
The procedure is super simple. I know, I always say that…but it’s true 🙂
Finely grate the carrot, the onion and the garlic.
In a bowl add the ground chicken, the carrot mix, the coconut cream and a pinch of salt for older kids. Combine well.
Grease your hands with some coconut oil and create an hamburger shape with 1 Tablespoon of mix.
Place the hamburgers one next to the other on a baking sheet lined with parchment paper. Bake at 400F/180C for 25 min.

- 1 lb ground chicken or turkey
- 1 carrot
- 1/2 red onion
- 1 clove garlic
- 4 Tbsp coconut cream
- 2 Tbsp coconut oil

I tried it with the onion and garlic but the flavor was a bit strong for my kid, so next time I made it I shredded half an apple and used that instead. She absolutely loves them! She’s not a big eater but she finishes these almost every time. I’m going to try adding shredded zucchini next!
