Banana Avocado Almond Pancakes – 6M Vegan

If you are looking for a yummy recipe to help your little one gaining some weight, you might want to try this pancake one!

The recipe is vegan (no eggs, no dairy), super soft and perfect for little palates. It can be served to babies starting from 6 months of age: simply skip the maple syrup and add an extra super ripe banana. The more brown dots on the skin, the better as it means that it is super sweet!! In this way you will add natural sweetness to the recipe without adding any sweetener.

I receive a lot of questions from parents worried about their babies or kids not gaining enough weight. My first reply is to always check with your health care provider/pediatrician your baby’s growth curve: every baby is different and grows at a different pace. Also, you need to take in consideration DNA: if your baby comes from a family of skinny and petite people, it might be that he/she will be growing in an healthy way but below the average.

There is no magic food that in few weeks will transform your little baby into a chubby giant one 🙂 But there are plenty of foods that can help your little one gaining weight in an healthy way. When I say “healthy way” I mean foods that are high both in calories and in nutrients. To give you an example: you can gain weight eating french fries all day…but that is not good weight, it’s saturated fats. OR…you can gain healthy weight eating almonds, avocado, salmon, eggs, nuts, seeds every day. And that combo of good high nutients/high calories foods will make you gain weight and energy at the same time. You will gain weight, feeling better too!

I decided to start a new series of baby recipes dedicated to “healthy weight gain” and today’s pancakes are the first one 🙂

Avocado + almond meal + hemp seeds + coconut oil are all high calories and high nutrients foods that will help your little one gaining healthy weight.

Also, the pancakes are so soft that can be offered in tiny pieces to little babies, perfect if you are following the baby led weaning method.

The procedure is super simple and I used a food processor to make it even faster 🙂

In a food processor add all the ingredients: coconut milk + avocado + banana + almond meal + flour + hemp seeds + cinnamon + salt + baking soda + baking powder + maple syrup (skip the maple syrup if serving the pancakes to babies under 12 months) + coconut oil.

Blend for 1 minute to obtain a smooth pancake batter.

Heat a small pan at medium heat for 30 sec and pour 1 Tbsp of mix for each pancake. Let it cook for more or less one minute. When you will see the sides of the pancakes getting firm and gold, flip on the other side and finish cooking for another minute or less. Stack the pancakes one on top of the others to keep them warm and fluffy. Serve warm.

You can add some berries to the mix for a more fruity flavor or, for older kids, some chocolate chips 🙂

You can freeze the leftover pancakes for future breakfast. Tip: divide the pancakes with a layer of parchment paper so that you will be able to thaw only one or few of them and not the whole quantity. I usually place the frozen pancake in the microwave for 30 sec and than into the toaster for 1 min.

Hi! The pancakes I made are still soft in the middle. I was worried they are not cooked enough for my little one. Do you think they are ok to feed my little one?

    Hello, Barbara

Lovely recipes, my daughter loves them so much. Just one question: could you convert the flour and the almond meal into grams for me? I wouldn’t want to go at it the wrong way. Thank you 🙂

      Hi Tina!
Sure, it’s 100gr. flour and a bit more of 30gr. almond meal.
      I know, between grams/cups/oz it’s not easy 🙂
My unit converter is the best kitchen gadget I got for BuonaPappa!! ciao, b

Where does the 2 Tbsp coconut oil go? It doesn’t say.

Hi Sarah! My mistake 🙂 I showed the coconut oil in the video but somehow I forgot to list it in the written recipe 🙂 You add the coconut oil in the food processor all together with all the other ingredients. Thank you so much for noticing it!! ciao, b

Great flavor but recipe needs work. Very gooey on the inside and they don’t hold together well. Still yummy and we will eat them but needs some tweaking.

Agree with the other comment that these unfortunately didn’t really hold together and were mushy in the middle even after cooking for a while on a lower heat. Making them thinner helped to get a slightly better result. Baby loved them regardless so thumbs up from her!

Hi Ellie! Yes, you are right. The pancakes are very tender and moist. The texture is definitely different from the traditional fluffy ones with eggs. I thought they would be a lovely and nutritious idea for little palates. I’m so glad to hear that your little girl enjoyed them! Ciao, b

This recipe makes the pancakes very gooey and hard to cut into bite sized pieces, adding an egg and more flour made them hold up better.

Stayed gooey in the middle. Thought I did something wrong until I saw the other comments mentioning the same thing. Made them smaller to try and help because I didn’t want to throw too much away.

Yes, the avocado and the banana give more density to the pancakes. For fluffier ones you can definitely reduce the size, that will help! Thank you, ciao.

I followed the instructions and make food for myself and my baby constantly. This recipe does not hold well at all – ingredients wasted and the cakes not in tact.
