The easiest fish sticks ever! Crispy outside, tender inside. One of the biggest complaint when preparing a baked fish stick recipe is the lack of crispness. It’s not easy to recreate the same crunchy texture of a fried food, but I’m happy to say that this super easy recipe got full thumbs up both from the kids and my hubby. They said “It’s like the fried ones”. BEST COMPLIMENT EVER for me!
This is a very simple and quick recipe that you can prepare for your family in 20 minutes. Few ingredients and a lot of flavor.
Three very important details that make the recipe great.
- Toast the breadcrumbs before coating the fish
- Use a rack to bake the sticks so that the air circulates all around the coating keeping it crisp.
- Use Panko breadcrumbs, not the fine grain Italian option. Panko breadcrumbs have a dryer and flakier consistency that will guarantee a crispy crust.
Extra points if you use an air fryer, it enhances the crispness even more.
PROCEDURE
Preheat the oven to 400F. On a baking tray add the breadcrumbs and spray them with some cooking oil. I used coconut oil spray, olive oil or cooking oil will work too. Bake the breadcrumbs for 3 minutes. Remove the tray, shake the breadcrumbs around and keep baking for another 3 minutes. You will obtain crispy and golden brown breadcrumbs.
Transfer the breadcrumbs in a bowl and add the garlic, sweet paprika, dried onion and sea salt. Mix and set apart.
In another bowl mix the eggs with the milk.
Cut the fish fillets into 1×3 inch sticks. Try to cut them the same size so that they will cook evenly.
Coat the fish sticks with the egg wash first and then with the breadcrumbs. Place them on a baking rack leaving some space in between. Spray the sticks with cooking oil and bake in preheated oven to 400F for 15 minutes. If you have an air fryer, even better!
I served the fish sticks with some steamed rice and broccoli on the side. My little one asked for some ketchup. An easy yogurt + dijon + salt + lemon + dill mix will work too. My older one suggests pink sauce (mayonnaise + ketchup). You choose!

- 1 lb white fish fillets, cut in sticks (1×3 inch). I used rock fish.
