When outside is hot you want fast, light and refreshing recipes. Popsicle are a wonderful idea for dessert, but as a main course?What about a pearl barley tuna salad with fresh tomatoes and olives? Easy to make, you can prepare it in advance and refrigerate so that it will be nice and refreshing when you will serve it.
The secret of this salad stays in the freshness and good quality of the ingredients: fresh seasonal tomatoes, red juicy and sweet, tasty canned albacore tuna in extravirgin oil of olive and a bunch of unsalted pistachios to give a crunchy touch.
The main ingredient is barley, of course, pearl barley. Easy to cook, it is a nutritious grain and a good source of fiber, energy, protein, vitamins and minerals. I really like its texture: softer than rice, still crunchy but with a lot of body. Perfect for cold salads!
