Baby Green Puffs, no gluten no dairy +6M

Baby Puffs are such an easy baby snack. I do not count the times when my kids were babies and we were either on the go or I needed a light snack for them…and baby puffs were such a fast + convenient + loved by them!!! solution.

There are many Organic Healthy products on the market, but when you will see how simple it is to make them at home you might change your mind 😉

Also, homemade baby puffs are not only super healthy but you can change flavor/color simply changing the organic and seasonal vegetables or fruit you will use.

Today I prepared some “green” puffs using kale and apple, a lovely mix. They are Gluten Free + Dairy Free + Refined Sugar Free!

The recipe is suitable for babies starting from +6 months, but the puffs were sooo good that even my 4yrs and 6yrs old kids loved them (they called them “green chips”).

The procedure is so simple that it will surprise you. To be 100% honest with you the tricky part is the baking phase. We want the puffs to be cooked (not burned!), dried and crisp so that they will melt in the baby’s mouth, exactly like the store bought ones.

Let’s start from the super easy part!

In a food processor add all the ingredients.

Blend up until a smooth cream will be formed (4min)

Using a chef pastry bag or a simple plastic bag, create tiny small dots on some parchment paper, the size you like.

Bake at 350 for 10, reduce at 250, and bake for additional 30 min up until crisp.

This is exactly the procedure that I followed to obtain the green puffs in the pictures. Pending the size of the puffs and/or how liquid the final mix will be (the apple sauce might be a bit more liquid than mine, the kale might have some water from washing it…) you might need more or less minutes for baking. So. My suggestion is to check the puffs in the oven after 30 min (that means 10 min at 350 + 20 min at 250) to see if they are ready. How you see if they are ready you will ask 🙂 You should be able to tap them with your finger and have no sticky residual. The sides should be lightly golden like in the picture (golden, not brown). Also, remember that they will dry out even more once cooled down.

If you are looking for an egg free recipe, simply switch the two egg yolks with 2 Tbsp of ground flax mixed with 6 Tbsp of water. Simple 😉

Storage: in an air tight container on the countertop for 1 week.

      I made this and they did not turn out.
      No fault of anyones but mine of course but I’d like to find out where I went wrong, so that I can try again! I tried the flax egg. I think where I might have went wrong was with the food processor step; my kale was not fully chopped but it just seemed like it was taking a long time. Come to think of it my mixture was slightly watery as well.

          Can you use Frozen kale?
          Will rice flour work or does it need to be rice cereal ?

            Hi! Good question. If you add the kale directly from the freezer, still frozen, it will add more moist to the recipe. I would only add 1/4 cup applesauce to balance it. Rice flour works too.

      These are amazing! My 8 month old is still working on fine motor skills, so things like Cheerios have been difficult. I just piped these out into wider circles or stick shapes and they work perfectly. She goes nuts for these things! By far her favorite thing I’ve ever made her.         Hi Holly, that’s a great question! I never tried but I think it will work. I would not suggest to freeze the baked puffs (they will loose texture) but the batter is different. Once thawed you might simply need to whisk it up again as the cold temperature can separate the ingredients. It’s an easy fix. Let me know how it goes!! Ciao, b

      I’m not sure what went wrong here but I followed the recipe to a T and mine started expanding into a big bubble but when taken out of the oven were totally uncooked inside and just deflated completely when I tried picking them up.

        Hi Sarah! Sorry to hear that 🙁 How big were the puffs? One common issue is that the puffs are a bit too big and they do not fully cook inside.         Hi Lisa, good point! I would substitute with rolled oats flour. Blend in a food processor the needed quantity of rolled oats and use it instead of rice cereal. Rolled oats are steamed and pressed, that means that are a good substitute for rice cereal. Ciao! B

        Hi Karen, I totally understand. I read the news about heavy metals in rice and baby food with concern too. For the puffs you can easily substitute the rice cereal with rolled oats blended in the food processor. I also suggest you this post from a friend of mine, Vivian from Plateful.Health. She is a M.D. and her Instagram account focuses on how to reduce toxins of any kind in our daily life. She is awesome.         Hi! Good question. The frozen kale has more water than the fresh one. If you switch to frozen you might want to add one tablespoon extra of rice cereal to compensate. Ciao! B

      These are great! Both my baby and toddler loved it. The rice puffs lose their crispiness after half a day though. Any tips for baking it to make the crispiness last longer?

        Hi! Good point. The crispiness goes away when moisture comes in. The storage way you store the puffs is important. Do not use air tight containers, some air needs to get in to keep them crispy. If you live in an area where humidity is very high you might also consider reheating them either in a toaster or air fryer for 1-2 min to get the moist out before serving them. I would suggest to try a batch of 10/12 pieces and start with 1 minute. See how it goes and if needed add another minute. Thank you!

        Hi Kristen, leftover baby puree is very common when your little one is transitioning to a more structured food.
        Hear some ideas: MUFFINS, sweet and savory. Add 1/2 cup of baby puree’ to any mix you like and they will simply add some extra moist to the final recipe. SMOOTHIES. Add any sweet puree to a smoothie and blend it. PASTA SAUCE. Baby purees make a wonderful pasta sauce by themselves or you can add other ingredients pending the combo of the ingredients.       This is an amazing recipe! I had to use frozen spinach based on what I had, but kept everything else the same and they turned out great! The consistency is great and they baked in 30 minutes total. This was a great way to use up some baby cereal. Thanks!

      Wonderful recipe. I made it with flax instead of egg since baby is allergic. The only reason for 4 stars instead of 5 is I did not find these to be a good replacement for “on the go” puffs as the intro of the recipe suggests because they were extremely messy when baby was eating them and stained her clothes. But I am still very pleased because they are a cool finger food for her to try working on pincer grasp/hand eye coordination while still being quite healthy. I will probably make again and definitely try other recipes from the site. Thank you! (Baby is almost 7 months)

      Hi Kimberly!! instant rice cereal (aka baby rice cereal) is a pre-cooked (usually steamed) powder to make baby food in less than 2 minutes without cooking it. Usually you mix the baby rice cereal with either some hot water/baby formula/breastmilk and it’s ready to use. Here you are a post with more info about it, let me know if you have any further info!!

          Instant baby cereal doesn’t need to be cooked, that’s why I used it (it’s simply faster!).
          yes, you can use regular rice or oatmeal and blend them to a flour consistency. you might need to cook the puffs a little more than suggested. I would proceed with the same quantities and than simply check in the oven after 30 min if the puffs are ready (they should be crispy enough to be removed easily from the parchment paper without sticking).     Thank you for this recipe.
    I used pears because I did not have applesauce and I also used oatmeal instead of rice flour. After baking mine for 10 minutes there were almost burnt. I did a second batch with the puffs slightly bigger than the first batch and baked for a shorter amount of time about 8 minutes and then reduced the heat but they also turned super crisp and brown within minutes. I couldn’t imagine keeping them in the oven for another 30 minutes even at a lower temperature. Do you have any advice on how to bake them at a different temperature?

      Oh, I’m sorry it didn’t go right at the first try,but I’m so happy you didn’t give up and simply tried again changing something. Every oven is different so the cooking times might vary. I have a very very old gas oven that usually runs low. which kind of oven are you using? gas/electric convection..in this recipe the goal is not to cook the puffs but to dehydrate them to make them crisp. that’s why the suggestion is to bake at a very low temperature for a longer time. at what temperature did you try the first and second time? ciao!!! b

      I also had horrible luck with this recipe on my 1955 gas oven. Kept burning to a crisp or not cooking thoroughly enough at different temperatures and times. I’ve given up after try two batches.

        ouch, I’m sorry ladies to hear that. Dehydrating in the oven is not always simple. It’s a delicate balance between temperature and timing. In addition, being the baby puffs so tiny, few minutes more can make the difference between crisp and burned 🙁
        The recipe in the post is the one I’ve been making for a while for my kids, my sincere suggestion is to check the oven very frequently. I really hope you will be able to enjoy the recipe. Thank you indeed for sharing your experience! ciao, b

          Is there anything you can recommend in place of rice cereal? I hate to be *that* mom, but recent tests have shown rice cereal contains a staggering amount of arsenic and other heavy metals

      I just made these for my 8mo. I made rice flour from organic brown rice- put it into a food processor and blended until I got a fine, soft powder. I followed the directions for the ingredients exactly, however I didn’t use parchment paper. I piped the puffs directly onto a Williams Sonoma cookie sheet. I did find that the first batch turned very brown on the bottom very fast so I didn’t leave them in for the full cooking time. My little one didn’t seem to mind the discolored bottom and ate some up as soon as they cooled down. I made the second batch a little larger (about the size of a quarter) and they turned brown on the bottom as well.
      My only complaint is how brown the bottoms were, but that would probably be solved with parchment paper.
      The recipe is easy. The ingredients are simple and I love that I could make it with organic brown rice. My little one loves them. 5/5!

    I’m looking to make these and finding a way to pack in the calories for my tiny high calorie diet needed nearly 10 mo old.

    My plan is to use vegetable oil vs coconut. Add in about a tablespoon or so of flax with the 3 egg yolks. Use breastmilk vs water and add in up to a tablespoon of formula powder.

    I’ll let you know how it turns out.

    Does the texture of the instant rice cereal matter? Most brands of cereal are similar but some have a coaser grain and once I tried the rice cereal from little Freddie’s and that had the most smooth and fine rice cereal. What did you use? And is it okay to use mixed cereals or only rice cereal? We have brands like Gerber, cerelac, bimbosan, little Freddie , Nestle, Bellamy’s, healthy times, hipp.

    Hi. Just tried my first batch and they didnt turn out well. I mistook your 2T flaxseed meal in your recipe for 2 teaspoons.. not sure if that is why it is not working.. the dough melted out into one thin large piece.. and just rather unpleasant.. seemed to be relatively hard.. not sure if my 9mth old is able to eat that.. 🙁

    I substituted 1 whole egg for the 2 yolks, and I think I did much smaller dots than you (mine were somewhere between pea and black bean sized) – only needed 10 mins at 350 followed by 10 mins at 250. Came out delicious!! Oh and baby likes them too, haha.

    My baby is allergic to all grains. Wheat, oatmeal and rice.
    Do you have any recipes with snacks I could make him without any of those? It’s been hat do find anything in store that doesn’t have that in it.

    Thanks for this recipe! I was wanting to offer a healthy, not messy, feed-yourself food to my 9mo, and beyond Cheerios at breakfast, I was stuck and didn’t want to buy any of the supermarket options. This is just what I needed, a method and ratios to adapt. =) Plus I had everything on hand, and it is using up that container of baby cereal that we were never otherwise going to touch again— win/win!

    This week I made two batches— first “green” with spinach and apple, which the baby and the 2yo liked very well but the 5yo and grownups weren’t so sure. (Maybe it is the coconut oil not going with the spinach?) Nevertheless they are almost gone!

    The second batch are “orange”, with cooked carrots and peaches and fresh ginger, and they are a hit all around. They are a little bit sweet and spicy, like tiny ginger snaps! I also changed the oil the second time to make that flavor recede.

    We started trying puff recipes because my 9 month old is allergic to oats which are in almost all store bought puffs. Yours was the second recipe we tried and we are hooked! She loves them and has eaten 3 batches already and I love the simplicity of making them! Soon to try out with some frozen blueberries and strawberries! When you use seasonal ingredients do you only adjust the baking time or do you sometimes have to adjust the rice cereal/ apple sauce/seasonal offering ratio for the consistency as well?

      yeah! I’m so glad you liked the recipe!!! Good question! I try to switch the ingredients keeping the same proportions and simply checking the baking time. Changing the measurements will affect the taste and I try not to do it. Ciao!! b

    Hi! Was wondering if almond flour would work or if it would change the consistency? I’ve read that a lot of baby foods, especially the baby cereals or foods with rice or sweet potato contain high levels of lead and arsenic. I used to buy the Happy Baby puffs but those were found to have high levels as well, which is a shame since my baby loved those! Even the adult cereals, oatmeal and granola has now been found to have high levels of carcinogenic weedkiller. I want to stay away from all rice and grains

      You are right, my dear. Picking healthy and not harmful ingredients for our families is getting trickier and trickier…we are now requested to be able to read an ingredients label and understand the meaning..something unthinkable for our moms 20/30 years ago. It’s simply sad.
      Going back to the recipe. The almond flour is a nice substitution. As rice flour doesn’t contain gluten too, I think the consistency will not change. I would definitely try!! Ciao, b

    I was so excited about this and I don’t want to give up. I have tried to make this twice now but I just don’t know what I’m doing wrong. They look brown on the outside and uncooked in the inside. How are they supposed to look inside?? I’d add a picture if I could but there is not the option to do that.

      Hello my dear! Sorry to hear that. The baking part can be tricky, I know. From your description (brown on the sides, uncooked in the center) it looks like you should decrease the oven temperature. Every oven is different (mine runs a bit low as the door is old and doesn’t close perfectly) so you might need to adjust my suggested temperature to your oven. Try to bake at 350 for 5 min only and than reduce to 250 for 40min. I hope it helps, let me know!! Thank you so much for not giving it up!! ciao, b

    The ingredient list is a little confusing as I missed the last part of the write up due to advertising so I thought you were supposed to use 2 eggs plus the flaxseed and water 🙁 They still came out tasting not too bad though but more on the soft side.

    Hi, I tried your recipe and followed everything except I substituted coconut oil with canola oil and rice cereal with Oat cereal. My puffs turned out very deflated and not puffy at all unlike yours. Also the insides took a long time to cook so I ended up having to leave it at 250 for 40-50mins. What do you think the reason for the deflatedness is? Thank you!

      Hi Pris, thank you so much for your comment! it might be the kind of cereal. Both rice and oats do not have gluten but they react in a different way when baked. Also, the size of the puff effects the cooking result. Too big puffs do not cook evenly in the center. I hope I was helpful, let me know if you have any more questions!! ciao, b

    i just tried this recipe and the baking process was more successful than i imagined! tastes good too. however, perhaps like Heidi, my puffs were too big so didn’t yield a melting texture either. i am just curious, what is the white liquid you are adding into the processor in the first picture above? my blended product was also not as creamy as yours…

      Thank you so much for your comment! LOL, when making baby puffs, the baking part is the tricky one, I tried so many mixes and oven temperatures before sharing this one.
      Tips. The size of the puffs for sure affects the baking time and the final results. Puffs too big tend not to cook in the center properly. The white ingredient in the picture is instant rice cereal that can be substituted also with rice flour. Hope it helps! let me know if you have any more questions!!! ciao, b

    Hi,
    I used instant rice powder and followed the recipe diligently but to no avail.
    How to make it thick and yet cooked? Mine spread thinly on the paper when I created small dots. After baking for 50 mins in total following your instructions (180’c for 10 mins, 150’-160’C for 40 mins) It’s slightly brown at the sides.. I used a spoon to scrap them cos they seemed to be stuck to the paper, but they were still wet underneath.. hence leaving residues on the paper. What should I do to rectify?
    I really want to make it for my baby..

      I’m sorry to hear that. Do you think your mix was more liquid than the one you see in my video? some applesauces are more liquid than others. My suggestion to fix the density of the mix is to add more instant rice cereal. It will act like a glue and absorb the extra moist. The sides should be a bit brown like you see in the picture, but the center of the puff should be cooked and should now leave sticky residuals on the parchment paper. Let me know how it goes!!!     Hi! If I want to use a dehydrator, do I just put it directly in the dehydrator? Do I bake it at all? What temperature and time would you suggest?

    Also, is the ratio of baby rice cereal to flour for substitutions a 1:1 ratio?

      Hi! Good questions!! The dehydrator has a special tray for leather fruit rolls, so that you can insert creamy texture foods without making a mess 🙂 I would use that one.
      For the time, I would suggest 10/12 hours. Yes, 1:1 ratio for the flour. Let me know how it goes!! ciao, b

    My “puffs” were hollow. I assume this is a baking issue. I cooked exactly how the recipe said. Perhaps I need to cook for less time? They looked good but the inside was empty

      Hi Jackie! Interesting result. There might be different reasons why. The oven might have been too hot, the baking soda reacted too quickly and created the hole inside. OR..the batter was over beaten allowing too much air to get in. Between the two, reason #1 seems more possible as every oven is different and my oven might run colder than yours. Try decreasing the temperature to 300 for 10 min and 225 for 30 min. Let me know how it goes!!! Thank you! ciao, b

      Hi Zoe! Good question. No, it’s not necessary. The baking powder can be replaced with baking soda and it helps the puffs raising a bit. Without anything you will get flat puffs. Still yummy, but flat 🙂 Ciao! b

    Hello! I attempted this recipe last night and it was a disaster, lol. Not because of anything recipe related but I had to alter it a bit due to my daughter’s fruit allergy. I substituted the apple sauce for butternut squash, and used the flax seed ratio in place of the eggs. I also added a bit of raw maple sugar powder to add a hint of sweetness. No bueno. There was a weird after taste, not sure what that was from either. I will continue to work on this recipe, but will have to find a solution to add a bit of sweetness. I will need to omit fruit until that allergy has been outgrown.

      Yes, you can add frozen veggies or fruit to the recipe.Only one suggestion: the frozen ingredient will add more water/moist to the recipe so I would add a bit more of rice cereals to keep the same consistency. Ciao!! b

      Maybe try to add 1/2 tsp of baking soda. The oven phase is what makes the difference and it’s the tricky part of the recipe: the puffs need to dry out completely without burning. It took me few tries to find the right temperature/time with my oven. Don’t worry and don’t give up!!! Also..if they are not perfectly puffed but they are yummy it’s fine!! Ciao, b

      Hi! you can, but it will add density and moist to the recipe and the puffs will not be crispy anymore. Have you tried mashing a banana and adding some peanut butter? I also use almond butter. It’s a kind of baby pudding. Or you can add peanut butter to apple sauce. It is a great addition to baby smoothies too. Just be careful to give a plain teaspoon of peanut butter by itself without supervision, it is a chocking hazard for little ones. Let me know how it goes!! ciao, b

      Hello Kristin! Good question. Yes, you can, but you will loose the crispness. Freezing will add back moist and water into the puffs and they will become soft. Still yummy, but with a different texture. Ciao! B

      Hi! It can happen if the center of the puff didn’t dry out completely in the oven. A trick is to leave the puffs on the countertop not covered. The air will dry them out furthermore. Thank you so much for sharing your experience!! ciao, b

      Hi Taiana! I would suggest to try to reduce the size of the puff. After many puff recipes I found that the small size makes a ton of difference. The puffs should be tiny, 1cm diameter max or they will not cook properly in the center. Let me know if that fixes the problem! Ciao, b

    Hi Kimberly , can you advise me for 1/2cup rice cereal is how many grams?
    For the 2egg York , is 2 egg York Plus 2T flax seed and 6T tablespoon?

    Tried to make these and I followed all the steps but just did apple sauce and didn’t add kale, they ended up burning and I have no idea why, if I could figure out what went wrong then I’m sure they’d be great.

      Hi! I think that eliminating 1 cup of kale might be the reason. 1 cup is too much to skip. If you don’t want to use kale I would suggest to switch to spinach or maybe 1 medium banana. Let me know if you try it again! Thank you, ciao!

      Fahrenheit, sorry if I didn’t specify it in the recipe. I fixed it. Every oven runs a bit differently. I would suggest to reduce to 300F and see how it goes. My top oven runs hot, lower one works fine and I need to adjust the temperature pending where I bake. I hope I was helpful, ciao! B

    These didn’t work out for me either. They seemed dry but still didn’t dissolve. I’m not sure where I went wrong, but I guess they’re snacks for me instead!

    Is it okay if use oatmeal cereal instead? And is there any substitute for the flax?

      Sure! The ground flax is a substitute for eggs. So you can use 2 egg yolks OR 2 Tablespoons of flax meal mixed with 6 tablespoons of water. Do you need another substitution for eggs?

    Have you ever tried using a dehydrator rather than baking? Just wondering if they would be more crispy like rice puffs?
    All the kids love them!!

      Yes and it works very well! I didn’t use it in my recipe as it’s not a very common tool to have in the kitchen but it’s perfect for this recipe as basically the oven is used as dehydrator.
      If you have it, you should definitely use it.

    This looks amazing, but I’m concerned about whether baking powder is safe for my 10-month-old baby. I’ve been advised to avoid using both baking soda and baking powder.

      Hi May. I think the opinion that baking soda and baking powder are not appropriate for babies is related to their sodium content. If used for recipes in the right amount, both baking soda and baking powder are safe for little ones. The amount used in recipes is usually so tiny that the sodium content will not be harmful in any way but will just have a leavening role in the recipe, basically will create bubbles in the mix.
