Sweet summer tomatoes, mozzarella, ricotta, basil, good quality Extra virgin oil of olive and pasta, that’s it! Another easy recipe for our toddlers and for the rest of the family.
A fresh pasta dish that is perfect for a summer lunch. My dad used to cook it when we were at the seaside, coming back from the beach at lunch. He was amazing in the kitchen. Everything from scratch and with tons of creativity!!
Two secrets for the perfect result of the recipe:
1- let the tomatoes drain their water as much as possible. What you are looking for is the fresh essence of the tomato pulp.
2- let the mozzarella drain too. Cut the mozzarella in cubes at the beginning of the recipe so that it will drain the extra milky water in few minutes.
If you are cooking this pasta for your toddler you might want to use a small pasta shape (easier to eat!!).
p.s. why is called CAPRESE? because it’s in the style of the famous Caprese salad from Capri. very simple ingredients but terribly good! sliced fresh mozzarella, tomatoes and basil, seasoned with salt, and olive oil.
