Who said that Halloween should only be about candies and junk food? There are tons of spooky and fun recipes that are at the same time healthy and tasty. Your kids will go nuts for this super fun Frankenstein green pie (mine did!!) and they might even eat spinach+kale without complaining for one time 😉
Alex calls the pie “the green monster” and thanks to the cheesy ricotta and Parmesan flavor, he really really likes it!!
You can prepare the pie in advance if you have a party: you can either bake it and store it in the refrigerator for up to three days or prepare it, freeze it and (within 3 months!!!) bake it directly from the freezer just adding 10 more minutes to the suggested baking time. Just one caution: freeze it in a pan/container that will not break for the temperature difference from the freezer to the preheated oven. i.e. a silicone pan or an aluminum pan (the disposable ones).
Happy Halloween to everyone!!!

- 11 Tbsp or 5.5 oz. butter 150gr. Cold and cut in small pieces

In a big wok pan place the kale and the spinach. Add 4 Tbsp of water and cook covered for 3 minutes, stir once or twice.
-
Place the greens in a food processor and mix for 1 minute in order to create a smooth cream.
-
Place in a bowl.
-
Using the same food processor (you do not need to wash it!) add flour + cold butter in cubes + 3 Tbsp of green mix.
-
Mix for 3 minutes: a dough will be formed.
-
wrap the dough in parchment paper. refrigerate for 30min.

Take the green puree bowl and add the ricotta, the grated Parmesan, the feta cheese, mix
-
add the egg, mix

remove the dough from the refrigerator and cut it in two parts (2/3 and 1/3)
-
preheat the oven at 180C/400F
-
roll the bigger dough with a rolling pin.
-
Cover the bottom and the sides of a rectangular shape baking pan. The rectangular shape is VERY important as it is the shape of our Frankenstein face!!
-
Fill it with the green cheesy mix
-
Roll the smaller dough trying to give it a rectangular shape as big as the pie.
-
Place the dough face on top of the filling
-
Using a knife and your hands close well the sides of the pie forming a frame for Frankenstein's face.
-
Cut out Frankenstein’s mouth and eyes: one long rectangle and two small rectangles.
-
Decorate with the carrot
-
Cut some scars on the face (as many as you like!!)
-
Using some dough leftovers cut out a long rectangle and place it in the center of the pie as Frankenstein's nose
-
Make some holes on the sides of the cuts with a toothpick.
-
Using some long rosemary leaves stitch the cuts
-
Cut the leftover dough in small triangles and attach them to the top of the pie creating Frankenstein's hair.
-
Add two carrots at the side bottom of Frankenstein's face to create the screws
-
Bake in preheated oven at 180C/400F for 30/35 min
-
Enjoy!!!
