Easter is coming!! so it means that spring is here with a lovely weather knocking at the door and bright colors back in the house! I love it!!
Today I would like to share with you a pasta recipe, easy to make and very tasty. I recently prepared it for a lunch playdate with some of Luca’s friends and moms: the kids cleaned their plates in no time and this was a big compliment for me 😉
Considering the ingredients I would suggest this recipe for toddlers (over 12 months) and, of course, for the rest of the family!
Any kind of long pasta will work (spaghetti, tagliatelle, fettuccine). I’m using pancetta (Italian bacon), less fat than bacon and deliciously tasty: if you do not find it easily in your grocery store you can always try some smoked ham (a big slice chopped in cubes)
or bacon (you can remove some of the white fat and use mainly the pink/red part).
Also, I’m making a light version of the bechamel sauce with no butter or oil. If you want to go even lighter you can substitute the bechamel with some fresh ricotta cheese.
